Ingredients
Cake Dough
- 185 g Butter, softened
- 165 g castor sugar
- 3 eggs
- 50 g Desiccated Coconut
- 260 g SR flour
- 270 ml can coconut cream
- 440g can crushed pineapple, well drained
- 25 g Shredded coconut
Lime Glaze Icing
- 240 g icing sugar
- 20 g Butter, melted
- 2 level tablespoon lime juice

Preheat oven to 180*C, line 22cmX32xm cake tin with baking paper. Beat butter and sugar in TM on speed 7 for 10 sec. Scrape down with spatula. With blades rotating on speed 3 add eggs one at a time, through hole in lid. Add both coconut, SR Flour, coconut cream, and crushed pineapple. Beat 10 sec speed 5. Scrape down, and mix again 4 sec speed 5 if necessary. Pour dough into prepared cake tin. Bake till top is golden, and cake tester comes out clean. Cool, then turn out onto cooling rack, and remove baking paper. Place cake onto container, ice with lime icing.

Tip
You may use lemon juice, or pineapple juice in icing if you do not have limes.

I love the recipe. The slice was perfect. It was moist and slightly tangy. A winner in my household. It will become a regular snack.

This cake/slice is AMAZING! I swapped the butter in the icing for nutlex to accomodate my daughter who can't have (non baked) dairy and it was very flavoursome. My whole family really loved it, I will be making again!

Delicious!! I didn't have any coconut milk so I did 160ml thickened cream and made up the rest with regular milk...added a dash of coconut essence. This cake is divine...my family loved it! I will definitely be making it again.
