Ingredients
- 250 g Butter
- 170 g Raw Sugar or Rapadura
- 2 eggs
- 220 g Puréed cooked pumpkin, (Steam pumpkin in Veroma until cooked. Cool and purée in TM bowl until smooth)
- 1 heaped teaspoon Vanilla paste or extract, Optional
- 140 g Self Raising Flour
- 140 g plain flour
- 375 g mixed dried fruit

Cream butter and sugar for 1 min speed 4
Add eggs, pumpkin and vanilla paste if using and mix for 10 secs speed 5
Add fruit and mix on reverse for 5 secs speed 5
Add flour and mix on reverse, for 20 secs, speed 4 using spatula to help incorporate flour.
Pour into a round 24cm tin and bake for 70 mins at 180 degrees.
Tip
I steam a large portion of pumpkin in the veroma at one time, puree it and freeze 220g portions for later use. It is a quick cake to make if you have pre-cooked pumpkin on hand.
