Pumpkin-Oats-Cookies

  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1 1/2 cup old fashioned rolled oats
  • 3/4 cup Whole Wheat Flour
  • 1 large egg
  • 3/4 cup Coconut sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon cloves powder
  • 1 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

Recipe's preparation

  1. 1. Preheat your oven to 180 degrees C (or 350 degrees F). Prepare a baking rack by lining it with parchement paper. Set aside.

    2. Combine the pumpkin puree, egg and vanilla until very well mixed (this is the wet mixture). In another bowl, add the rest and the ingredients (oats, flour, sugars, baking powder, baking soda, spices and any optional nuts or dried fruits that you wish to use) and mix well. This will be your dry mixture. 

    3. Fold the dry mixture into the wet mixture until just incorporated. Do not over mix them. The batter will be a bit thick.

    4. Drop a spoonful of the mixture onto your cookie sheets and flatten it down slightly. Make sure you leave enough room between the cookies so they do not touch each other. 

    5. Bake for about 14-15 minutes or until golden brown. Remove quickly from the baking sheet to prevent sticking. Keep well in a airtight container for up to 4 days.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
