Ingredients

Base

  • 60 g Butter
  • 1/4 cup caster sugar, or 45 grams
  • 1 egg
  • 1 tsp vanilla essence
  • 1 1/4 cups self-raising flour

Topping

  • 1/2 Cup raspberry jam
  • 1 Cup coconut
  • 3/4 white sugar, (any preferred sugar)
  • 1 large egg

Recipe's preparation

    Base
  1. Beat 60 g soften butter and 1/4 cup sugar to a cream. 1 minute, speed 4
  2. Add the egg and beat well. 20 seconds, speed 4.
  3. Add 1 tsp Vanilla
  4. Add 1 1/4 cups flour to mixture gradually. work into a stiff paste. 40 seconds, speed 4. Scrape sides and repeat if need.
  5. Press out into a greased/ lined tin, approx 28 x 18 cm
  6. Rince and clean bowl
  7. Topping
  8. Spread 1/2 cup raspberry jam evenly over base
  9. Beat egg. 5 seconds, speed 4
  10. Add 1 cup coconut and 3/4 cup of sugar. Mix well, 20 seconds, speed 4
  11. Spread coconut mixture evenly over the surface
  12. Bake in moderate oven (180 fan forced) for 15 minutes or untill golden brown
  13. Cool slightly before cutting into squares
