Ingredients
Raspberry & Lemon Coconut Slice
- 125 g Butter, softened
- 1/2 cup --- caster sugar
- 2 level tsp grated lemon zest
- 1cup plain flour
- 1/2 cup self-raising flour
- 1 egg, lightly beaten
- 1 cup raspberry jam
- 125 g raspberries, halved
topping
- 2 eggs, lightly beaten
- 1 cup caster sugar
- 21/2 cups Desiccated Coconut

- Preheat oven on CircoTherm Intensive and place the wire rack on shelf position
Grease and line a 20 cm x 30 cm lamington pan. - Place butter and sugar in bowl 2min speed 4 until smooth and creamy.
3. Add egg 30 sec speed 4.
4. Sift flours add to bowl speed "Gentle stir setting" 1 min or until combined.
5. Spread over prepared tin.
6. Cover base with jam and place raspberries on top. - 1. Combine topping ingredients in bowl and mix 30sec speed 6 "Counter-clockwise operation"
2. Spread evenly over base, pressing gently with the back of a spoon.
3. Bake for 35 to 40 minutes or until golden and cooked.
4. Allow to cool before cutting.
