Ingredients

Cake

  • 280 g Butter
  • 375 g plain flour
  • 180 g raisins
  • 4 tbsp Rum
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 300 g brown sugar
  • 6 eggs
  • 2 tsp vanilla extract
  • 190 g cream

Icing

  • 60 g Butter
  • 60 g brown sugar
  • 2 tbsp Milk
  • 190 g icing sugar
  • 1 tsp vanilla extract

Recipe's preparation

    Make the cake
  1. 1. Combine rum and raisins in a bowl and set aside to soak. 

    2. Preheat oven to 160 degrees C.  Grease 12 cup bundt pan with butter and lightly dust with flour. (alternatively grease & flour 2 ring pans or loaf pans)

  2. 3. Combine flour, salt and baking powder in thermomix bowl and mix 5 seconds speed 4.  Tip into clean bowl and set aside.  No need to wash out TM bowl.

  3. 4. Place butter in thermomix bowl and mix 20 seconds speed 5.  Add brown sugar and mix 20 seconds speed 5.  Scrape down sides of bowl.  Insert butterfly and whisk 30 seconds speed 4.

  4. 5. Scrape down sides of bowl then close lid & while whisking on speed 4 with butterfly in place, add eggs one at a time through the hole in the lid, mixing for for a total of about 1 minute.  Remove butterfly & scrape sides

  5. 6. Add half the flour mixture to thermomix along with half the cream.  Mix 10 seconds speed 5.  Add remaining flour & milk and mix a further 10 seconds speed 5.  Tip raisins & rum into TM bowl and mix 10 seconds, reverse, speed 5

  6. 7. Transfer batter to prepared pan and smooth the top.  Bake in oven for 105 minutes if using Bundt pan (75 minutes for loaf or ring pans).

  7. 8. Remove from the oven once cooked and set aside in pan for 20 minutes before turning onto a wire rack to cool completely.  Once cool ice as below.

  8. Icing
  9. 1. Combine butter and sugar in clean & dry thermomix bowl, and mix 3 minutes, 80 degrees, speed 2.

  10. 2. Add milk and cook a further 2 minutes at 90 degrees speed 2

  11. 3. Add icing sugar and vanilla to the bowl and mix 20 seconds speed 4.  Quickly pour over cake and spread evenly.

Tip

Note can either make a single large cake or two smaller loaf or ring cakes.

Can be stored, wrap in plastic, for 2 days,
