  • 125 grams Butter
  • 90 grams golden syrup
  • 50 grams glucose syrup
  • 395 grams sweetened condensed milk
  • 1 teaspoon Maldon Sea Salt Flakes

Recipe's preparation

    Salted Caramel Fudge
  1. Line a 20x20cm tin with baking paper

    1.  Place melts into thermomix and grind to a fine powder for 6 seconds at speed 9. Remove and set aside (no need to wash bowl).

    2. Add all ingredients except chocolate and salt into the thermomix bowl, cook for 8minutes at 100C on speed 3 without the measuring cup.

    3. Scrape the fudge from the sides of the bowl and replace lid.

    4. Cook for 25minutes on varoma (don't use measuring cup) on speed 3.

    5. Add powdered chocolate and mix for 10seconds, speed 4.

    6. Scrape down bowl and repeat step 5.

    7. Pour fudge quickly into lined tin, sprinkle with salt flakes (gently press onto surface) and refrigerate a minimum of 4 hours or until set.

    8. Using a sharp knife cut into 36 squares.

    9. Will keep approximately 2 weeks in a sealed container in the fridge.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    I have made this fudge countless times now and taken it everywhere! Parties, dinners, fundraisers, you name it. Sometimes I substitute a little dark chocolate into the white and its delicious. Very grateful for this wonderful recipe 😘
