Salty Suedy's Basic Scone Recipe

  • 500 grams self-raising flour, plus extra to dust surface and tray
  • 1 level tablespoon baking powder
  • 1 pinch salt
  • 1 tablespoons Neat Egg replacer, (found at Coles supermarkets)
  • 120 grams unsalted butter, plus extra to coat tray
  • 300 grams Milk, plus some to brush

Recipe's preparation

  1. Preheat oven to 180°C.
  2. Grease and flour 20x30cm scone tray. Set aside.
  3. Add 500g flour, 1 tbsp baking powder, 1 tbsp Neat Egg replacer, and pinch of salt to mixing bowl. Combine for 5 sec at speed 5.
  4. Add 120g unsalted butter. Mix for 6 sec/speed 8 until mix resembles breadcrumbs.
  5. Add 300g milk and combine 20sec/speed5, then knead 20sec/Dough mode"Dough mode" .
  6. Transfer dough onto lightly floured surface. Divide dough into 12 balls, or press dough into 2cm thickness and cut 12 rounds with floured scone cutter.
  7. Place scones in tray touching each other. Brush tops with extra milk. Bake for 20-25mins at 180°C until lightly golden and skewer pulls out clean.
  8. Cover tray with clean dry teatowel and allow to cool. Serve warm with jam and cream. When completely cooled they can be wrapped tightly and frozen for later use.

Tip

Optional tools that will help:

-6-7cm round scone cutter
-Silicone mat for patting out and cutting dough
-Silicone basting brush

If your scones are browning too quickly on the top, consider the following options:

-Bake them on a lower rack of the oven
-Cover the scones with a wet piece of baking paper once brownness is achieved until insides are done.

Scones are done when they sound hollow when tapped with a knife, or a skewer inserted in the middle comes out clean.
