- 90 grams brown sugar
- 80 grams caster sugar
- 1 egg
- 1 teaspoon vanilla extract
- 225 grams Self Raising Flour
- 140 grams milk chocolate chips, or 1/2 white, 1/2 dark

- Preheat oven to 160 degrees Celsius fan forced
Cream butter and sugars together until fluffy and light, 1 minute/speed 3.5/mc on
Add egg and vanilla, 30 seconds/speed 4/mc on
Add flour and Choc chips, 30 seconds "Counter-clockwise operation" speed 1/mc on
Scrape down sides and repeat for a further 20 - 30 seconds,mc on, until thoroughly mixed.
Tip mixture out onto a thermomat/board and gently shape dough into even sized balls
Place on baking trays lined with baking paper
Bake 160 degrees celcuis fan forced oven for 12 minutes or until golden
Leave for a few minutes on trays before transferring to a wire rack to cool
Tip
If you want your cookies to be uniform in size and shape, refrigerate a log shaped dough for about 10 mins before slicing with a knife or TM spatula.
You could also use a block of chocolate broken into pieces, grate/3 seconds/speed 6 prior to step 1.

This recipe is a hit in our house, they don’t last long. Have also substituted choc chops for 100s and thousands. Cookie dough can be frozen easily.
Very easy and nice.
The first lot of cookie dough got eaten while in the fridge!!
Next lot, I put in the freezer for a short time, so they would make it to the oven. 😬😬😬😂
