Ingredients

Sourdough Banana Choc Chip Muffins

  • 2 ripe bananas
  • 80 g Butter
  • 6 g Vanilla Paste
  • 200 g Sourdough Discard
  • 2 eggs
  • 150 g self-raising flour
  • 50 g almond meal, (can replace with SR flour)
  • 100 g sugar
  • 6 g baking powder
  • 6 g ground cinnamon
  • 200 g chocolate chips

Recipe's preparation

    Sourdough Banana Choc Chip Muffins
  1. 1. Preheat oven to 180c and line a 12 hole muffin tin with patty pans.

    2. Place bananas into TM bowl. Mash speed 8, 10 seconds. Pour into seperate bowl and set aside.

    3. Without cleaning, place butter, cut into chunks into bowl. Melt 100c, 60 sec, speed 3.
    Scrape down sides and melt for a further 20 sec, 100c, speed 3 if required.
    Allow to cool slightly.

    4. Add vanilla and sourdough discard to TM bowl and mix to combine, 20 sec, speed 3.

    5. With blades still spinning on speed 3, add the eggs one at a time through MC hole until combined.

    6. Add mashed banana to TM and mix for a further 20 sec, speed 3.

    7. Add SR flour, almond meal, sugar, baking powder and ground cinnamon. Mix 5 sec, speed 4.

    8. Add choc chips, mix REVERSE speed 4 for 10 sec.

    9. Fill pattay pans 2/3 full of mixture. The size of your patty pans will determin how many portions you will make. My patty pans allowed for 16 muffins.

    10. Cook for 20min until muffins are golden and cooked through.
