- 225 grams Butter
- 225 grams caster sugar
- 225 grams self rasing flour
- 1 tsp baking powder
- 4 eggs
- 1 tsp vanilla essence

Preheat oven to 175. Place 18 paper baking cases in a cupcake tray.
Place all ingredients in mixing bowl and mix 20-40 sec/speed 6 until smooth consistency achieved.
Pour batter into cases and bake for 20 minutes.
Remove from trays when cooked and leave to cool for 5 mins.
Tip
Store in airtight container for up to 3 days, or freeze for up to 3 months.

By far the best vanilla cupcake recipe ever!
Easy cupcake mix. I actually blend the sugar and butter together first add the eggs then the flour. Great results. Easy. Sometimes they taste eggy but I guess it depends on the size of the eggs! My go to for the cupcake base.
could you add cocoa powder to these? i love that they rise evenly so want to use this recipe. could you just amit the vanilla?
