Ingredients
Weight Watchers Banana and Blueberry Muffins
- 50 gram cater sugar
- 100 gram Nuttelex, (or weight watchers canola spread)
- 2 bananas, mashed
- 2 eggs
- 225 gram Self Raising Flour
- 1 tsp baking powder
- 150 gram fresh blueberries (2 punnets)
- 1 tsp vanilla extract

Preheat the over to 200 degrees and line a muffin tray with 12 paper cases.
Put sugar and nuttelex into the TMX bowl and mix for 5 seconds on Speed 4 or until creamed together. (You may need to scrape the sides with a spatula and do for a couple more seconds).
Add bananas, vanilla and eggs and beat for 5 seconds on Speed 4 or until combined.
Put flour and baking powder into the bowl and mix for 10 seconds on Speed 5 before decreasing to Speed 4 for another 10 seconds- 20 seconds all together (or until combined).
Take the bowl off and fold through fresh blueberries with your spatula.
Divide evenly between the 12 muffin cases and bake for 15-20 minutes or until well risen and cooked through. Transfer to a wire rack to cool.

These were delicious and came out perfectly. A great snack to have on hand and the kids loved them too.
I found the mixture a little dry before adding the blueberries. I added 40g water, and they turned out perfect.

I LOVE these muffins. I make them every week. My children are addicted. My only suggestion would be to try them with 20g of black chia seeds. I use 30g sugar and substitute the Nuttelex with 50g light olive oil. Delicious and healthy.

Hi Amylouella85, I made these with the kids last night and they are delicious! The kids were wanting to do cooking all day and I had some bananas that needed using but wanted to have a better option to stick to the WW plan, then I found your recipe. Thank you for posting weight watchers recipes on here. I put this recipe in the WW recipe builder and it comes up as 4 pro-points per muffin if you make 12.
