Ingredients
Scones
- peel of one lemon
- 1.5 tablespoons rapadura sugar or raw sugar
- 130 grams unbleached white spelt flour
- 145 gram wholemeal spelt flour
- 1/2 teaspoon bicarb soda
- 2 teaspoons baking powder
- 125 grams Plain yoghurt or buttermilk
- 60 grams Milk
- 1 teaspoon apple cider vinegar
- 100 grams very cold unsalted butter (cubed)
- 155 grams undefined
- 1 teaspoon vanilla extract
Cinnamon Vanilla Sugar
- 1 vanilla pod (beans)
- 1 cinnamon stick
- 350 grams raw sugar
Lemon Syrup
- 2 tablespoons Brown Rice Syrup
- 2-3 tablespoons lemon juice

- Preheat oven to 200 degrees C
-add the apple cider vinegar to the milk and set aside in a small jug
- Place lemon ring and sugar into bowl and mill 15-20 sec/speed 10
- add flours, bicarb and baking powder and combine for 6 seconds/speed 6
- add cubed butter to the bowl and mix for 6 seconds/speed 6
- add vanilla, yoghurt or buttermilk, berries and reserved milk and vinegar mix
- Incorporate ingredients gently /10 seconds/ The dough should not bee too wet, but will be slightly sticky.
- Empty dough onto a Thermomat sprayed with olive oil. You may need some oil on your hands too. then gently shape into 10-12 scones and place them onto a baking tray sprayed with olive oil.
- Alternatively, shape dough into a rough rectangle or circle on your baking tray and cut into wedges with spatula, then separate slightly.
- Bake for 25 minutes, or until golden and cooked through.
- Place sugar in bowl
- Add cinnamon stick and beans scraped from vanilla pod
- Mill 40-60 seconds/speed 10
- dust onto scones once they have completely cooled
- Combine brown rice syrup and lemon juice. Heat gently if necessary to combine more effectively.
- Drizzle over the scones

Tip
When kneading, take care not to overwork the mixture or the scones will be dense and the berries will bee to mushed. Check after 8 seconds if you are unsure, then continue until you see that ingredients are combined.
If your mixture appears too dry, you can add some extra milk, however the dough should not bee too wet.

I made these plain with no berries so I could use them for sweet or savoury. A beautiful scone. Light and moist and full of goodness. I did not use any of the glazes. They were going so quickly I was scared I was not going to get one. Many thanks. will sure use again.

I think the undefined must be berries. There are berries added in the recipe.

These look great, but what is 155 grams undefined please?
This is lovely. I didnt have any white flour so just used wholemeal spelt. I also didnt put the sweet stuff on top as i made this for lunch for my kids. Will make again as very easy to do. Thanks!
