Ingredients

  • 100-150 g Dark Chocolate (85%), Broken into squares
  • 400 g Raw almonds (skin on)
  • 1 tsp bicarb soda
  • 1 tsp sea salt flakes
  • 60 g coconut oil or butter, melted and cooled slightly
  • 5 tbsp Maple syrup
  • 4 tsp vanilla extract

Recipe's preparation

  1. 1. Preheat oven to 180 degrees celcius

    2. Line 2 trays with baking paper

    3. Place chocolate pieces between 2 pieces of baking paper and use a rolling pin to bash into smaller, irregular pieces as shown in picture (or you could use choc chips)

    4. Place almonds, bicarb and salt in mixing bowl and mill for 10 seconds on Speed 8

    5. Add all remaining ingredients except chocolate and mix on Speed 4 until a soft dogh forms (approx 6-8 seconds)

    6. Scrape down sides of bowl with spatula to incorporate ingredients

    7. With damp hands, roll dough into balls and place on baking sheet

    8. With damp hands, flatten each ball, ensuring there is space between the cookies

    9. Push chocolate pieces gently into the top of the cookies

    10. Bake for 12 minutes or until golden brown, then leave on the bench to cool and set

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
