Recipe's preparation

  1. Place milk into TM bowl and cook for 30 minutes at 90c, speed 1.  Remove TM bowl from base unit and place on bench.  Allow to cool until no temperature registers on the base unit when TM bowl is put back in place.  This will take approx. 30 minutes.  Keep checking on the temp once it registers 37c.  As soon as no temperature registers or it has been at 37c for at least 10 minutes, you are ready to proceed with the next step.  If the milk is not allowed to cool correctly it will kill off the live bacteria in the starter culture.


    Pull off and discard the 'skin' which will have formed on top of the milk.  Add the Natural Yoghurt and blend gently for 4 seconds, speed 1.  Cook for 10 minutes, 37c, speed 1.


    While your yoghurt is 'cooking', boil the kettle and tip the boiling water into a Thermos and put the lid in place.


    Once the yoghurt is cooked, pour it straight into the Thermos and leave it overnight or for up to 24 hours.  The Thermos should not be touched or bumped in any way during this time.


    Line a colander with cooking muslin and pour the yoghurt into the muslin.  Leave to drain for approx. 15-30 minutes.  Tip your yoghurt into a container and store in the fridge.  Reserve 3 tablespoons of this yoghurt to use as your starter culture for your next batch.  If your intolerance to lactose is quite high give-away the first couple of batches.  I found that the 3rd batch was fine for me to eat.  Obviously this may change with each individual.

    Is this fresh milk or UHT. I have tried to make this with UHT (long life) milk, so didn't heat treat us as already done! But it was runny! Any tips please

    Thanks for that. I didn't realise the 37degree light had to be off, so I just waited 'til it was the only light on then added the starter culture. 

    I bought the yoghurt that was recommended, so I'm sure it was the right one. Tub not here now. I may try again. Cooking 4

    Hi CrazyV, I am sorry to hear that your yoghurt didnt set properly. The most common reasons for yoghurt not setting are:

    1 - the temperature of the milk mix was too warm when you added your starter culture. The 37 degree light must be off before adding the starter otherwise the heat will kill off all the good bacteria.

    2 - your starter yoghurt didn't contain 'live' bacteria. Have a look on your starter pot and see whether it contains the words "live bacteria" or "pot set". Either of these words mean that the starter has live bacteria and you will be able to make yoghurt with it. Generally 'flavoured' starters will not work. You are better off using a natural yoghurt.

    I tried making yoghurt using lactose free milk and lactose free yoghurt as a starter culture. I used the thermo cookbook recipe, but the yoghurt didn't set. Is it because I used the wrong yoghurt as a starter?

    Thank you so much. My 10 month old son is lactose intolerant but was a lover of yogurt before he was diagnosed. I've now made half a dozen batches and he is loving his yogurt with his fruit puree. Hopefully the cultures will help his belly heal as well. Thanks again tmrc_emoticons.-)

    Hi there,

    yes that's right the boiling water is my to pre warm your Thermos. You can also do the same thing and use your ThermoServer. Tip the boiling water out and pour the yoghurt straight into the ThermoServer. Then wrap your ThermoServer in an old baby blanket or I use an old beach towel. Leave it overnight and in the morning you will have lovely fresh home made yoghurt!

    I'm very new to the thermomix and this will be my first yoghurt.  Is the boiling water in the thermos just to warm pm the thermos ( so tip the water put before adding the yoghurt mix). Could I put the mixture into a warmed thermo server?

    I used to buy Harvey Fresh lactose free pot set yoghurt, ( I'm in WA) now I will be able to make my own thanks to this recipe!!!
