- 400 grams kosher salt
- 1 package salt flakes, High quality eg. Falksalt

add lemon peel and Rosemary to bowl and process for a few seconds speed 5. Scrape down and repeat.
add kosher salt to bowl and grind 5-6 seconds, speed6. Check consistency, and repeat if necessary until you have something that resembles wet sand.
stir in salt flakes on reverse using spatular to thoroughly mix
spread out on a tray and place in a slow oven for one hour to dry out, stirring occasionally.
allow to cool and store in an airtight container, preferably glass.
will last indefinitely

Not having any luck editing. Wanted to add that the purpose of the salt flakes are to add texture as well as a more rounded gentler flavour however a box is quite expensive. Mixing it with kosher salt makes it more cost effective. Crush lightly between your fingers when using. Another popular brand is maldon.
