Ingredients
Freshly milled flour
- 110 grams rice, white, brown, glutinous, wild, use a mix
- 40 grams millet
- 20 grams dried chickpeas
Additional dry ingredients
- 70 grams arrowroot flour or tapioca starch
- 20 grams seeds of your choice, Sesame/sunflower/linseed
- 1 teaspoon xanthan gum
- 10 grams sugar, rapadura or raw
Wet ingredients
- 15 grams oil, rice bran, sunflower
- 0.5 tablespoon apple cider vinegar
- 1 large egg
Yeast mix
- 170 grams water
- 1.5 teaspoon dried yeast
Salt
- 0.5 teaspoon salt

Describe the preparation steps of your recipe
Place rice, millet and chickpeas into TM bowl "Closed lid" and mill for 2 minutes on speed 9 to make flour.
Add additional dry ingredients to TM bowl "Closed lid" and mix for 20 seconds on speed 4. Set aside.
Without washing bowl, add water and yeast and mix for 1 minute/37deg/speed 1.
Add other wet ingredients, flour and salt, in that order. Mix for 5 seconds/speed 5.
Knead for 6 minutes/"Closed lid" /"Dough mode" . In the meantime, line a metal pan with baking paper.
Transfer dough to Thermomat and use spatula to divide into 4.
Use spatula and a spoon to scoop balls onto preprepared baking pan.
Use wet fingers to smooth the rolls into roughly round shape.
Prove in a warm place (eg your car!) for at least 30 minutes, until rolls have doubled in size. In the meantime preheat oven to 180 deg.
Bake for 30 mins (flip rolls over after 20 mins). Check it is cooked with a wooden skewer.
Let rolls cool before serving.
