Ingredients

Pizza dough

  • 260 grams almonds, raw
  • 130 grams Tapioca flour or arrowroot flour
  • 1.5 teaspoons baking powder GF
  • 1 level teaspoon salt, Or a little less
  • 3 eggs
  • 4 tablespoons coconut oil melted
  • 125 grams Nut Milk, 1/2 cup

Recipe's preparation

    Pizza dough
  1. Pre heat oven to 180 degrees C.

    Line 2 pizza trays with baking paper.

    Mill almonds to almond meal 8 sec / speed 9

    add tapioca, baking powder and salt mix 5 seconds / speed 6

    Melt the oil if needed. 

     

    In a small mixing bowl whisk the eggs, milk and coconut oil. 

    With TMX motor running at about speed 2 or 3 add the egg mix a third at a time. If it is really cold and your oil keeps solidifying set the TMX to 37 degrees. 

    Now knead it for a minute or so.  

    Spread mixture onto 2 x pizza pans. 

    Bake for 5 minutes or until lightly browned.

     

    To finish heat the oven to 250 degrees C and cook the topped pizza for 5 to 10 minutes. 

Tip

These can be made ahead of time.

I nearly always just make a 1/3 of a batch, if I am just cooking for me.

85g almonds / almond meal
40g Tapioca
1/2 tsp baking powder
1 eggs
pinch of salt
40mls of nut milk

Quite often, I just drop all the ingredients into the bowl and mix them up, rather than whisking the egg, milk and oil and it doesn't seem to make that much difference.

I have also made this out of the leftover almond pulp, after I have made almond milk. It is a bit weird, as I usually use honey in my almond milk, so the "dough" is a touch sweet, but if does help to use up the vast amount of nut meal I have in the fridge.
