Place drained beans and 500 grams of water into "Closed lid" and cook for 6 minutes at 80 degrees "Counter-clockwise operation" on speed 1-2. Ensure that the beans are cooked at 80 degrees for at least 2 minutes.
Blend for 1 minute on speed 8 until smooth and creamy.
Add remaining water and sugar and cook for 6 minutes at 90 degrees on speed 2-3.
Strain through a muslin cloth or nut bag, and transfer to a glass bottle or jug.
The milk will need to be shaken before each use.
Tip
If you are short of time, strain the milk using dish washing gloves, so as not to burn your hands on the hot milk. It is easiest to strain it into a wide mouth large jug (say 2 litres) and then pour it into a glass flip top lid style bottle. Use a bottle with a wide mouth so you can easily clean it.
I have found that the least amount of sugar you can use is 15g, for the milk to be drinkable. Soya is naturally bitter, so you do need to sweeten it.
The left over pulp is called okara and has several uses, but is quite bland and grainy. Use it in your worm farm or bokashi bucket.
Commercial Soy milk is fortified with calcium and sometimes vitamin D. I have tried fortifying the milk with egg shell, ground up in the thermomix to a powder, but this probably remains in the okara rather than in the milk. I think it is probably better to spoon a tiny bit of eggshell powder directly onto kids cereal, or to ensure they get their calcium from other dietary sources. Vitamin D is best obtained from playing outside when the sun isn't too strong.
This soy milk is OK, but not brilliant for use in a latte. It is best suited to being used on breakfast cereals.
