Ingredients
apple mixture
- 150 g unsalted butter, cubed
- 110 g brown sugar
- 3 Granny Smith Apples, peeled, cored and cubes
- 1 teaspoon vanilla extract
- Extra butter to grease the ramekins
batter
- 175 g unsalted butter softened & roughly chopped
- 175 g caster suar
- 3 eggs
- 100 g almond meal
- 100 g plain flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon

Grease 8 (1/2 cup) ramekins with extra butter.
Place butter and brown sugar into the TM bowl, cook for 15 minutes Varoma temp speed 2.
Add apple and vanilla and cook for 15 minutes Varoma temp speed 2.
Set aside and when cooler divide between the ramekins.
To make the batter, put the butter and castor sugar into the TM bowl and blend for 5 seconds speed 5, insert the butterfly and cream the butter and sugar for 1 ½ minutes. Speed 4.
Reduce the speed at 1.5 and add the eggs 1 at a time mixing between scraping down sides if necessary. Mix at speed 3 for another 10 seconds.
Add the flour, baking powder, almond meal and cinnamon, and mix to incorporate into the batter, a few seconds at speed 3, scraping down sides if necessary.
Spoon the batter carefully over the apple mixture in the ramekins and smooth the top of the mixture.
Put into the varoma bowl and steam for 30 minutes varoma temp speed 3.
Serve with cream or custard from the Everyday cook book.
Tip
Larger ramekins can be used but the cooking time will need to adjusted.
Using the butterfly to mix the batter gives a light fluffy pudding.
