Ingredients

  • 100 grams Beetroot, peeled and roughly chopped
  • 200 grams dark chocolate, broken up
  • 120 grams Nutelex
  • 200 grams Sr flour( or GF)
  • 100 grams Coconut sugar
  • 1 teaspoon baking powder (or GF)
  • 3 eggs
  • 1 tablespoon vanila bean paste ( or extract)
  • 20 grams Cocao powder
  • 1 pinch salt (optional)

Recipe's preparation

    Healthy Chocolate & Beetroot muffins
  1. Pre-heat oven at 160C. Prepare muffin trays. Place beetroot into mixing bowl and chop 10 sec/speed 6-7. Set aside. Clean and dry mixing bowl.

  2. Place chocolate into mixing bowl and grate 10 sec/speed 8. Set aside.

  3. Place butter into mixing bowl and melt 2 min/70˚C/speed 2

  4. Add reserved beetroot, chocolate, flour, sugar, baking powder, eggs, vanilla and cocao powder and combine 30 sec/speed 5, or until well combined. May have to push down sides and repeat. 

  5. Transfer mix to muffin cases and bake for 15- 20 minutes or until an inserted skewer comes out clean. Enjoy warm or cold. 

Tip

If your feeling creative you can add raspberries/blueberries or even nuts into this.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Love these! Used coconut oil instead of nutelex, only 70g sugar and gluten free flour. Perfect. Thanks!
