Ingredients
Doughnuts
- 200 grams potatoes, peeled and cubed
- 500 grams water
- 375 grams milk, warmed, (or 1 and 1/4 cups)
- 1 sachet instant dried yeast, (or 8-10 grams)
- 150 grams sugar
- 2 large eggs
- 720 grams bread flour
- 150 grams lard, (or coconut oil)
- Butter, softened
- castor sugar, extra, for dusting

Using the steaming basket, add the water to the TM bowl and steam the potatoes for 20-25 minutes, 100 C, SPEED 2. Ensure they're soft enough to mash but allow to cool completely before doing so. Drain the water from the bowl.
Add milk, sugar, eggs and yeast to the bowl. Mix for 8 SECONDS on SPEED 6.
Add remaining ingredients and, with the aid of the spatula, mix for 10 SECONDS on SPEED 6.
"Dough mode" Knead for 2 MINUTES. Mix should be soft and may appear a little sticky.
Turn dough out onto a well-floured bench/Thermomat and incorporate that flour into the mix using your hands.
Roll dough out to approximately 1cm thick - about the size of the Thermomat.
Cut out rounds and allow to double in size (approx) for 30 MINUTES.
Heat enough oil in a pan to deep fry four at a time. Oil is hot enough when a little of the dough bubbles and rises to the surface straight away. The doughnuts will puff up and brown. Turn a few times to ensure even colour. Drain on paper towel.
Optional: brush warm doughnuts with melted butter and toss in sugar.
