Ingredients

Cake Ingredients:

  • 280 grams plain flour
  • 200 grams sugar
  • pinch salt
  • 2 eggs
  • 1 teaspoon bicarb soda
  • 850 grams tin of fruit cocktail

Sauce Ingredients:

  • 190 grams sugar
  • 1 tablespoon vanilla essence
  • 3 tablespoon Butter
  • 150ml can evaporated milk

Recipe's preparation

    Method
  1. Place all cake in TM bowl & mix for 25 secs on speed 2.

    Pour into large glass dish-lasagne dish & bake for 40-45 mins at 180'.

    Place all sauce ingredients in TM bowl & cook for 5 minutes, 100' speed 2.

    Once cake is cooked remove from oven & prick cake all over.  Pour sauce over entire cake, it absorbs into the cake. Try & stop at 1 piece!

    This is now one of my go-to recipes when I need to make a dessert. I always keep a tin of fruit cocktail and evap milk in my pantry so that I can make this anytime! Everyone that eats it, raves about it! I absolutely love it! Thank you!!!!

    Made this today, to use a large tin of Heinz Five Fruit (tinned fruit from when my teens were toddlers) -- so used that instead of the Fruit Cocktail (this tin has been in my pantry looking at me for around 11 years !)  I just gave it a quick blitz after step 1, to puree it.  Made my own evaporated milk because I didn't have any (see recipe community for recipe).  This was OMG amazing !  The yummiest cake/dessert in the world .. So glad I didn't throw out the damn tin in the last 10 pantry cleanouts. I would never have discovered this beautiful recipe ! Thanks so much !
