- 290 grams hot water
- 185 grams Butter
- 3 eggs
- 55 grams brown sugar
- 220 grams SR flour

Chop dates 20 seconds speed 5. Add bi-carb soda & water- allow to cool slightly. Mix in remaining ingredients 30 seconds on speed 5.
Pour into lined cake tin (I used a square tin 20 x 20cm) Bake at 150' for 1-1 20mins
Serve with whipped cream.

I found this recipe whilst I was looking for a cake with no cane sugar in the ingredients. I replaced the 55 grams of brown sugar with a good splash of maple syrup. I baked it in two smallish heart shaped tins for about 45 - 50 minutes. The cakes rose beautifully, cooked perfectly, and were moist. I sandwiched them together with date caramel sauce (medjool dates, maple, coconut oil, milk) and covered in dark chocolate ganache. Delicious!
