Ingredients

Base

  • 200 grams (organic) dessicated coconut
  • 1 tablespoon Cacao or cocoa powder
  • 10 medjool dates (pitted)

Filling

  • 10 medjool dates (pitted)
  • 120 grams macadamias
  • 1/2 teaspoon scraped vanilla pod (or any kind of vanilla)

Topping

  • 80 grams maple syrup (or honey)
  • 2 tablespoons Cacao or cocoa powder
  • 100 grams coconut oil (soft or melted)

Recipe's preparation

    there's only three steps to this recipe:
  1. Base:

    blend all ingredients for 30 sec/speed 8, scrape down, repeat.

     

    Press the mixture firmly into a slice tin (use the back of your MC for this), set aside.

     

    Filling:

    combine all ingredients and blend for 30 sec/speed 8, scrape down, repeat.

     

    spread over the base.

     

    Topping:

    combine all ingredients and blend for 30 sec/sp 8, scrape down, repeat. (note: if your coconut oil is 'hard', start this process by adding the coconut oil only and heating it for 2mins/37deg/sp2 before adding the other ingredients)

     

    Top the slice with this and refrigerate or freeze until set. If you freeze it, leave it out on your kitchen bench for a few minutes before serving.

Tip

swap ingredient to your liking....cinnamon instead of vanilla....walnuts instead of macadamias....agave syrup for maple syrup....anything goes!

    Absolutely loved this slice.  Had a few minors issues which can be easily rectified.  Found when trying to add the caramel centre to the base it was all too sticky which made it difficult but next time will put the base in fridge or freezer for a short time first which I think will help.  Choose to use a thick raw honey for the topping and this was a total fail as it would not blend with the coconut oil - oil stayed separated no matter what I tried, so ditched this and went with the maple syrup and had total success.  Individual components taste great on their own but as a whole YUMM !! Everyone who tried loved so thank you for an awesome and guilt free recipe Big Smile

    We love it! I made a slight variation due to one family member having a nut allergy. Substituted the nuts for sunflower seeds. 

    Yum. Great for all the family, especially my little grandson. Thank you for a healthy alternative that suits our needs. tmrc_emoticons.)
