Ingredients

Vanilla Fudge First Layer

  • 200 g white chocolate
  • 1 can Sweetened Condesed Milk
  • 210 g sugar
  • 125 g Butter
  • 50 g glucose syrup
  • 2 tsp vanilla extract

Caramel Fudge Second Layer

  • 200 g white choclate
  • 1 can Sweetened Condensed milk.
  • 160 g brown sugar
  • 120 g Butter
  • 75 g golden syrup
  • 50 g glucose syrup

Recipe's preparation

    First Layer
  1. 1. Place chocolate into TM Bowl and mill 5sec/sp8. Set aside

    2. Place butter, sugar, liquid glucose, vanilla and condensed milk into TM Bowl and cook 8min/100deg/sp3 with MC removed. Carefully remove lid to prevent condensation dripping into mix. Shake condensation into sink. Scrape down the sides of the bowl. 

    3. Cook for 18min/varoma/sp3 with MC removed. Again carefully remove lid and shake condensation into sink.

    4. Add milled chocolate and mix 10sec/sp4 or until chocolate is mixed in. If necessary scrape down sides and mix again. 

    5. Pour into a tray lined with baking paper and refridgerate.

     

    6. Thuroghly clean out Bowl and Blades, allow Bowl to cool completly.

     

     

     

  2. Second Layer
  3. 1. Place chocolate into TM Bowl and mill 5sec/sp8. Set aside

    2. Place butter, sugar, liquid glucose, Golden Syrup and condensed milk into TM Bowl and cook 8min/100deg/sp3 with MC removed. Carefully remove lid to prevent condensation dripping into mix. Shake condensation into sink. Scrape down the sides of the bowl. 

     

    3. Cook for 18min/varoma/sp3 with MC removed. Again carefully remove lid and shake condensation into sink.

     

    4. Add milled chocolate and mix 10sec/sp4 or until chocolate is mixed in. If necessary scrape down sides and mix again. 

     

    5. Pour ontop of previously prepared layer and refrigerate until both layers are set.

     

    6. Cut into SMALL bits as it's bloody sweet.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
