Ingredients

Base

  • 250 g Chocolate Ripple Biscuits
  • 150 g unsalted butter, cubed

Peppermint layer

  • 360 g raw sugar
  • 3/4 teaspoon Peppermint Essence
  • 1 tablespoon vegetable oil
  • 3 tablespoons Milk, (approx.)

Chocolate layer

  • 200 g Dark Chocolate Melts
  • 2 teaspoons vegetable oil

Recipe's preparation

    Base
  1. 1. Lightly spray a 20cm x 30cm lamington pan, then line with baking paper. Set aside.


    2. Crush biscuits 4 times/1 sec/Closed lid/Turbo. Set aside.


    3. Add cubed butter to TM bowl and melt 2 min/50/speed 4.


    4. Add crushed biscuits to the butter and combine 2 times/1 sec/Closed lid/Turbo.


    5. Press mixture firmly into prepared pan. Refrigerate for 30 minutes or until set.

  2. Peppermint layer
  3. 1. In a clean, dry TM bowl, mill raw sugar 10 sec/speed 9.


    2. Add peppermint essence, oil and milk. Combine 10 sec/speed 4.


    3. Scrape down sides of TM bowl. Mixture should be a firm spreadable paste consistency. If required, add more milk and combine a further 5 sec/speed 4.


    4. Spread peppermint layer over the base. Return to the fridge until firm.

  4. Chocolate layer
  5. 1. Add chocolate melts to clean, thoroughly dry TM bowl. Grate 5 sec/speed 9. Melt chocolate 4 min/50/speed 3.


    2. Spread chocolate layer evenly over the peppermint layer. Refrigerate until firm.

Tip

1. If you prefer the peppermint layer to be a brighter white colour, substitute the raw sugar for pure icing sugar. If using pure icing sugar, skip step one (milling) in the peppermint layer section and simply combine all ingredients as above.

2. When spreading the peppermint layer, I find it easier to use the back of a hot spoon. This prevents the mixture sticking to the spoon. I use a glass of hot water to dip the spoon in as I go.

3. If you'd prefer to use a block of dark chocolate (instead of the melts) then break it up into squares before following the steps above.
