Ingredients
- 4 Big Croissants, 4 Big or 8 Little ones
- 80 gram raw sugar
- 4 Eggs.
- 1 vanilla bean pod
- 300 gram whipping cream
- 300 gram whole milk
- 50 g Butter, To Spread
- 50 g raspberries
- 1 raspberry jam, To Spread
- 1 cinnamon sugar, To Sprinkle on Top

Preheat Oven to 160
Place the sugar and vanilla Bean into mixing bowl and mill 10 sec/Speed 9. Scrape down the sides of the bowl
Add Cream, milk and eggs and mix 10 sec/speed 5
Half Croissants and butter lightly both sides and spread raspberry jam on one side up.
In the baking dish put one layer of the croissants in butter side down. This will create a nice caramelly crust. Sprinkle raspberries on top and continue layering until no croissants left. On the top layer I have the croissants with the jam side up and no raspberries on top as they will burn.
Pour over egg mix in the baking dish and sprinkle the cinnamon sugar on the top. Make a water bath for baking dish. Place baking dish in a larger baking tray and pour boiling water until half way up the baking dish. Bake for approx 50 mins until pudding is firm. This will vary from oven to oven. Fan forced about 50 minutes. Allow to cool for about 5-10 mins before serving

Tip
You can use fresh Raspberries or frozen ones. Any type of berry can be substituted but I think matching the jam and the berry is a good tip.

I took this to a dinner party last night - winner I also included some white chocolate drops for some additional decadence. For the size dish I used, I could have added more croissants.

I made this today using dried blueberries because I ddin't have rasberries, added dark choc bits and didn't use the jam, it was fatening but not something you always have so why not lash out and have something naughty once in a while!!!! the family loved it Thanks so much for sharing your receip with us
