Ingredients
Cake Batter
- 1 Whole Orange Rind
- 1 tsp ground cinnamon
- 170 g soften butter
- 70 g Coconut sugar, or your choice of sweetener
- 3 eggs
- 170 g spelt flour or your choice of flour
- 1.5 tsp Baking Powder (make your own EDC)
- .25 tsp salt
- 100 g walnuts
- 90 g Milk of choice
Syrup
- 200 g Raw Honey
- 80 g water
- 20 g fresh orange juice

1. Mill Orange & Cinnamon sp9/15sec - set aside.
2. Cream Butter & Sugar Sp3/1min - scrape down side.
3. Incorporate eggs one at a time while mixing on sp4.
4. Add Flour, Baking Powder, Salt, Orange and Cinnamon Mix, Walnuts and Milk. Mix sp5/10sec.
5. Bake in 180 degree C Oven in Greased and floured 23cm square tin for approx 20 mins or until cooked through. (check by inserting a tooth pick if it comes out clean it is done)
1. Add honey, water and orange juice. Boil 100d/5min/sp1.
2. Prick small holes in to cake and pour hot syrup over cake slowly to absorb.
