Ingredients

Clone of Bailey's Irish Cream

  • 2 cans Ayam coconut milk, 2 x 275 g can
  • 2 cans Ayam coconut cream, 2 x 275 g can
  • 100 grams Pure Maple Syrup
  • 100 grams Lindt 70% Dark Chocolate, (dairy free)
  • 100 grams rapidura sugar
  • 2 tsp instant coffee
  • 1 tablespoon Boiling water
  • 300 grams coconut water
  • 300 grams Scotch Whisky

Recipe's preparation

  1. 1.  Place the 2 cans of Ayam coconut milk in the fridge.

    2.  Make Dairy Free Coconut Condensed Milk

    Pour Coconut Cream and Pure Maple Syrup into Closed lid"Closed lid" .  Place simmering basket on lid instead of MC.  Cook 70 min / 100 degrees / speed 3-4. (you are aiming for approximately 250 g of mixture)

    3. Add Lindt Chocolate and Rapidura Sugar to the condensed milk in Closed lid"Closed lid" .  Cook 2 min / 50 degrees / speed 1.  Scrape bottom and sides of jug.  Repeat if chocolate not melted.

    4.  Set 30 seconds / speed 3 - pour through lid (no MC) the liquid only from chilled cans of coconut milk (use the top/cream part in smoothies etc), coconut water and coffee dissolved in boiling water.  Scrape bottom and sides of bowl.  Repeat if not smooth.

    5. Add 300 g Scotch Whisky and mix 20 sec / speed 2.

    6. Pour into sterilized bottles and refrigerate.

Tip

Take out of fridge 5 minutes before serving and shake bottle gently.

Adjust quantity of Chocolate and Scotch Whisky to personal taste - add more or less as you wish.

Can be made using the TM31 and TM5.

    Hi Stefaneigh,I have modified the recipe to chill the 2 cans of coconut milk so that only the bottom liquid is used and the cream on top can be used in smoothies etc.  My batch is pourable straight from the fridge.  Hooray. PS Still shake bottle so the chocolate mixes in well if settled to the bottom.

    Hi Stefaneigh - leave the bottle sit on the bench for 5-10 minutes then shake carefully - will pour out then.  (I have my Bailey's in small "sauce" bottles). PS Thank you for making my recipe.

    I made this today and its very yummy, however when its chilled it sets and is like a mousse that has to be eaten with a spoon. Not sure what I did wrong tmrc_emoticons.(
