  • 1 pinches cream of tartar
  • 1 tablespoons Vanilla Bean Paste
  • 500 grams pouring (whipping) cream
  • 1 litres full cream milk
  • grated nutmeg, Fresh, to taste

Recipe's preparation

  1. Place sugar into mixing bowl and mill 10 sec/speed 9. Transfer into a bowl and set aside.
  2. Insert butterfly whisk. Add egg whites and cream of tartar and whip 3 min/50°C/speed 4 with measuring cup removed. Transfer egg whites into a large punch bowl and set aside.
  3. Without rinsing mixing bowl, and with butterfly whisk inserted, place egg yolks, vanilla and reserved icing sugar into mixing bowl and beat 2 min/speed 4. Transfer into punch bowl with the egg whites.
  4. Without rinsing mixing bowl, and with butterfly whisk inserted, place cream into mixing bowl and whip on without setting time/speed 4, watching through hole in mixing bowl lid, until cream has thickened. Take care not to over-whip.
  5. Transfer whipped cream into punch bowl, add milk and stir to combine. Sprinkle with fresh nutmeg and place into refresher to chill. Serve chilled.

Tip

Place into freezer just prior to serving for an ice-cold refreshing drink in summer.

Pour or into a shallow freezable container and freeze to serve as ice cream.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
