Lemon Cordial Concentrate
- 30 grams Lemon peel, Pith removed
- 200 grams lemon juice
- 500 grams Boiling water
- 500 grams sugar
- 3 level teaspoons tartaric acid

- Place peel, juice, boiling water, sugar and tartaric acid in mixing bowl.
Cook 10 minutes, 90 degrees, speed 2 reverse, MC on.
Strain and pour into sterilized bottles.
Makes about 1 litre of concentrated cordial
Tip
I use a vegetable peeler to remove thin strips of peel before juicing the lemons.
Tartaric Acid is different to Cream of Tartar, and can't be substituted. I buy Tartaric Acid from Woolworths.
UPDATE: Some Woolworths no longer stock tartaric acid. Try IGA. If you can't find it, it's available from shops that sell home brew and winemaking supplies, and I buy mine online. You can use citric acid instead, 1 teaspoon of citric acid is the approximate equivalent of 3 teaspoons of tartaric acid. DON'T USE CREAM OF TARTAR.

Love this recipe, sadly in my house doesn't last long, 3 kids a big glass each a day and I've now had to mare up a second batch, but at least they drink this rather than looking for soft drinks.

Thank you for this - it's wonderful- I added 125 gm of ginger and only 450gms sugar and just perfect for our taste.
OMG - amazing! Made with only 2 oranges & slightly less sugar! Will definitely try with lemons and maybe lemon/lime combination. Has taken me awhile to find tartaric acid whilst travelling in a caravan. Luckily found in a small town IGA in Nanango Queensland 👏🏻. Was worth the wait 😋

Hi Maisey. You could definitely use less sugar, which would give a more tart result. Alternatively you could play around with monk fruit sweetener, which you would substitute 1:1 (so 500g of sweetener for a single quantity of this recipe).
