Recipe's preparation

  1. Place apple pieces, berries and water into TM bowl; mix fo 20 seconds on speed 3-4

    Heat for 5 minutes at 90 degC on speed 2; Straining juice through a sieve into a separate jug; Return to TM bowl.

    Add Stevia; Heat for 3 minutes at 90 degC on speed 2

    Cool juice and pour into sterilised bottle. Refrigerate

Tip

If using different quantities of fruit, the general rule of thumb is to add equal parts of sugar for the juice produced. 1 tsp of Stevia is roughly equivalent to 1 cup (220g) of sugar.

 

I experimented with a batch using Stevia and another using sugar. For this particular combination of fruit, the Stevia produced a much more pleasant and fruity flavour. The sugar batch produced just over 600ml of cordial and was too syrupy for my liking; with further dilution you lost the taste of the fruit.

    Thanks for the recipe, i didn't have stevia so just used sugar. I'll have to do some trial & error to find the right combo.

    Hi - I'd use either Pink Lady's, Royal Gala or Golden Delicious. They don't make a very dark coloured juice - perhaps not Granny Smith as they can make a juice which is a little more bitter.

    Hi Kailly, You can buy the powdered or liquid form from Coles or Woolworths. There are two brands. Personally I prefer Natvia. Wholefood shops stock it as well. Cheers, Sue
