Ingredients
Curried Salmon and Rice
Base
- 1C long grain rice, (White/Brown/Basmati)
- 30 grams Butter
- 1 egg
- Salt and pepper, to taste
Filling
- 440 grams Pink Salmon, removing bones and skin
- 45 grams Butter
- 2 tablespoons flour
- 1 tablespoon curry powder, adjust to taste
- 380 grams Milk
- 1/2C mayonnaise, (110g homemade mayonnaise)
- 2 teaspoons lemon juice
- 2 tablespoons parsley
- 1 egg
- 60 grams cheese

- Chop parsley, 4 sec/speed 7. Set aside.
Grate cheese, 8 sec/speed 9. Set aside, clean bowl.
To cook rice: measure rice into TM basket, rinse and follow cooked rice method in Everday Cookbook. Discard water after cooking and dry TM bowl. - In a dish 11 × 7 × 2" (28 × 18 × 5cm) place cooked rice, egg, butter, salt and pepper; combine well. Press mixture onto base and up sides.
- Arrange drained, flaked salmon over rice base.
In a dry TM bowl, add curry powder. To release flavours dry roast 3 mins/varoma/speed 1 with MC out.
Add to TM bowl butter, flour, milk, mayonnaise, lemon juice and reserved parsley and cook 7 mins/90°/speed 4.
Let sauce stand to cool to at least 60° then add egg 20 sec/speed 4/"Counter-clockwise operation" . Preheat oven to 180°C.
Pour sauce into prepared rice base, top with reserved grated cheese and bake for 25-35 mins or until golden.
Serve with a side of salad or oven roasted seasonal vegetables.

I just love this recipe.......
I do cheat and add curry, flour, milk, mayo all n at the same time and cook 7 minutes on 90degrees speed 2.
tastes the same.
