Ingredients

Otak Otak

  • 150 g french eschallot, peeled, around 10pcs
  • 25 g garlic, peeled, around 5pcs
  • 10 pieces long red chillies, deseeded
  • 5 pieces dried chillies, deseeded, soaked half hour
  • 25 g turmeric, fresh, peeled
  • 3 stalks Fresh Lemongrass, use root up to 5cm length
  • 25 g galangal, fresh root, peeled
  • 6 pieces candlenuts
  • 20 g roasted shrimp paste
  • 5 piece eggs, approx 240g
  • 2 tsp salt
  • 1 tsp ground white pepper
  • 1 tsp sugar
  • 0.5 litres coconut cream
  • 2 tablespoons rice flour
  • 500 g Firm White Fish Fillets, cut to 5cm chunks
  • 15 pieces fresh kaffir lime leaves, finely shredded 1mm

Assembling Parcels

  • 1000 g water
  • 10 pieces banana leaf, 18 x 20cm rectangles, scald to soften
  • 10 pieces daun kaduk, optional
  • 10 pieces Toothpicks, or stapler

Recipe's preparation

    Prepare Otak Otak
  1. Place turmeric, lemongrass roots, galangal, candlenuts into bowl and Turbo 2 seconds, twice

    Add chillies, eschallots, garlic, eggs, salt, white pepper, sugar, rice flour, shrimp paste, coconut cream, fish and Blend"Blend" 60 seconds speed 10.

  2. Place fish in a sealable container and pour otak marinade in. Add shredded kaffir lime leaves and let it marinade for at least half hour.

    Wash bowl and fill with tap water 1 liter and boil to 100 degrees

  3. Cut banana leaves to rectangle 10 x 19cm. Wipe clean and make sure there's no cracks in the leaves. Cut another strip of 5cm x 15cm. Make 10 of each and scald or burn to soften leaves. Daun Kaduk Leaves Wash and drain dry. Have toothpicks OR stapler to secure otak otak packs on standby.

    You can do this after preparing otak otak marinade (as it requires 30 minutes marination)

  4. Folding Parcels
  5. Place banana leaf strip on the table and place 10 x 19 cm rectangle banana leaf on top.
    Place on daun kaduk, then 4 tablespoons of otak mixture.

    Lift top and bottom banana leave to meet, then crease sides to fold and create a sitting triangle. Banana leaf strip still remains on the table and as parcel is gathered, bring the leaf strip to the top and use a toothpick or stapler to secure parcel.

    Cut excess leaves and place on Varoma.

  6. Steaming Otak Otak
  7. Boil 1 liter water in Thermomix and place varoma tray with parcels.

    Steam for 15-20 min Varoma Speed 4

Tip

Other important accessories : Scissors, Staplers, or toothpicks.

No banana leaf? replace with baking paper.

No daun kaduk? Leave it out.
