Ingredients

Wat Tan Hor (Rice Noodles in Egg Gravy)

  • 600 g Flat Rice Noodle, Noodle Slab 1kg pack cut 3cm strips
  • 1 cloves garlic, smashed
  • 20 g Soy
  • 10 g Dark Soy, or Kecap Manis
  • 20 g oil

  • 10 g oil
  • 3 cloves garlic
  • 300 g meat sliced, I used chicken thigh fillet, thickly sliced
  • 200 g Medium Raw Prawns, deshelled, deveined
  • 300 g bok choy, washed, chopped lengthwise
  • 500 g hot water
  • 1 tsp Chicken stock powder
  • 5 g Dark Soy, or kecap manis
  • 20 g oyster sauce
  • 20 g fish sauce
  • 10 g shaoxing wine, optional
  • 20 g cornstarch, mix with 2 tblsp water
  • 2 eggs, beaten

Recipe's preparation

    Prepare Noodle
  1. Slice 3cm wide strips the rice noodle slab (1kg) and separate to individual strips (Use microwave warm heat or warm water to separate gently as cold noodles are brittle). Mix in 20g light soy, 10g dark soy and toss noodle till well coated. Add garlic & 20g oil to bowl.

    Set sauteed noodle in Oval Thermoserver. Keep warm.
  2. Egg Gravy
  3. Add 3 cloves garlic Chop 3 Seconds, Speed 7.
    Add 10g oil, Saute 3 min, 120degrees, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"
    Add 300g meat, Saute 3 min, 120 degrees, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"
    Add 500g water, 1 tsp chicken stock powder, 5 g dark soy, 20g fish sauce, 20g oyster sayce, 10g shaoxing wine, dash of white pepper optional. Use spatula to scrape the base of the bowl to deglaze the burnt bottom from noodle stirfry. Boil 5min, 120 degrees, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" . In separate bowl, add 20g cornstarch with 2 tablespoons cool water, mixed well. Another separate bowl, crack 2 eggs and mix well. Set both bowl aside.
    Scrape bottom of the bowl again with spatula and add Bok Choy, prawns, cook 5 min Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" . At the final minute of this cook
    , stir in corn starch mixture from the opening of the measuring cup. Then close the lid with measuring up and pour beaten egg on the lid to drizzle into the bowl in the last 15 seconds. When finished, pop the measuring cup off to let the rest of egg mixture drip and close the lid again to let the gravy cook for 2 minutes.

    Pour on top of noodles and garnish with washed sprouts, fried onions and garnished with coriander and cut chillies.

    Eat alongside pickled green chillies or sambal belachan or sliced red chillies.

Tip

If you don't have Cookidoo on your TM6, or using TM5, stirfry marinated noodles 5 minutes Varoma reverse spoon/soft speed.

TM 31 - Use Varoma, and add another minute or two.
