Ingredients
- 1 onion
- 2 tablespoons dill OR thyme, sage and parsley, (any Mediterranean herbs will work)
- 3 eggs
- 1 tablespoon mustard powder
- 200 grams flaxseeds/linseeds, Reserve 150g for crust
- 6 cans sardines in oil or water, drained
- 35 grams Coconut Flour, (6 tbsp)
- 30 grams rice bran oil or olive oil, for frypan
- 1 lemon, cut into wedges for serving

Mince onion, herbs, eggs and mustard powder for 5 seconds/speed 4.
Add 50g of the linseeds (reserve 150g) and all of the sardines and coconut flour. Mix for 30 seconds/speed 6. Scrape down sides of bowl and mix a bit more until ingredients are combined into a chunky paste.
Remove mixture from TM and roll into evenly sized patties. I find it easier to do smaller ones. Sprinkle reserved flaxseeds onto a plate and roll the patties in the seeds until covered with a thin layer all over.
Heat oil in pan and fry patties for 4 minutes on each side.
Serve with lemon wedges alongside a salad and/or rice.
Many dipping sauces work with this recipe depending on what style you want to go for - tzatziki, mayonnaise etc, as long as they are compatible with a Mediterranean fish flavour.
Tip
This recipe was adapted for TM from the anti-candida diet so is excellent for gut health.
Patties can be frozen uncooked for later defrosting and frying.
