Ingredients

  • 500 g Firm White Fish Fillets
  • 15 g Rice Bran Oil
  • 1 Medium Brown Onion, halved
  • 2 cloves fresh garlic
  • 20 g fresh ginger
  • 30 g indian curry paste, mild curry paste or korma
  • 4 fresh curry leaves
  • 250 grams coconut milk
  • 15 g lime juice
  • 1 tbsp fresh coriander leaves
  • cooked rice, to serve (see general tips)
  • fresh coriander leaves, to garnish
  • lime, to garnish

Recipe's preparation

    Curry
  1. 1. Cook rice in pot, as indicated on package.

    2. Place onion, garlic cloves, curry leaves, coriander leaves, ginger and chop 5 sec/speed 6.  

    3. Scrape down sides of bowl.

    4. Add oil, curry paste and blend 15 sec/speed 7 and cook 5 min/Varoma/speed 1-2.

    5, Add coconut milk and cook 5 min/Varoma/speed 1.

    6. Add fish fillets and lime juice and cook 4 min/90°C//speedGentle stir setting"Gentle stir setting"  .

    7. Serve with rice, lime garnish and coriander leaves.

    This was good. I used 300g coconut cream and about 800g of fish. I served with cauliflower rice which had hot chili through it. Was great together. Thank you.

    I have to give this a 9 for flavour, but 5 for substance. (I did figure out to put the speed on reverse though, before I saw the addendum). This meal as prepared was hardly enough to feed three, & really lacked any body. It was almost a thick soup than a curry.

    I will make it again but will double the amount of fish as I believe there will still be enough sauce to go around and perhaps with a kilo of fish (I used fresh New Zealand Hoki so one fillet = 250gm) it will be enough to serve for 4 people.
