- 4 Salmon fillets, Skin On
- 170 grams Pistachos
- 35 g fresh breadcrums
- 2 tablespoons lemon juice
- 3 heaped tablespoons Dijon mustard
- 3 tablespoons Olive Oli
- pinch sea salt and pepper to taste

I'm cooking this todayRecipe's preparation
1) Place salmon in oven proof tray skin down
Preheat oven to 180* C
2) Place Shelled Pistachio's in TM speed 10 for 4 secs should look like ice cream sunday nuts if not blits for another 3 seconds speed 10
3) add in bread crumbs and oil blits speed 7 for 3 seconds to combine
If not all combined "Counter-clockwise operation" speed 4 for 3 seconds
4) in small dish mix lemon juice and Dijon Mustard into a thick paste
5) put a thick coating of the lemon and Dijon mix onto the salmon
6) place Pistachio/breadcrumb mix ontop of the Dijon and lemon paste
7) place in oven for 20 minutes once cooked set for 1 minute prior to serving
serve with salad or vegetables of choice

Tip
cooking time may vary depending on your oven and the size of the fillet
left over mix can be frozen

I have made this dish 5 times now, it is amazing! I first used Macadamia nuts as that was all I had on hand and loved the taste so I have kept using them in place of Pistachio. Thank you for sharing this wonderful recipe, I have never posted a comment on a recipe before but this one is so good, I felt the need to praise it.
Made this tonight, super easy and delish! Put a little too much of the sauce on the salmon so bits were a little overpowering but will rember for next time! Hubby raved about it. Winning! Thanks for sharing
