Ingredients

Balsamic marinade

  • 30 grams garlic cloves
  • 2 long sprigs of fresh rosemary, (leaves only)
  • 10 grams fresh basil leaves, (or handful only)
  • 2 tsp ground ginger
  • 2 tsp dried oregano
  • 2 tsp Onion powder
  • 2 tsp Dijon mustard
  • 20 grams Pure Maple Syrup
  • 100 grams white balsamic vinegar
  • salt and pepper to taste
  • 1.1 kilos of lamb cutlets
  • olive oil for cooking

SWEET POTATO MASH

  • 1.2 Kgs of sweet potato, (cut into medium size cube pieces
  • 160 grams Milk
  • 40 grams cream, (optional can use milk)
  • 30 grams Butter
  • 1 tsp cinnamon

Oven Roasted Pumpkin and Broccoli

  • 1 tbsp vegetable thermomix stock
  • 380 grams water
  • 500-600 grams pumpkin
  • 1 and a half broccoli florets, ( or however many you want

Recipe's preparation

    Balsamic Lamb Cutlets with Sweet Potato Mash
  1. 1.Place garlic, rosemary and basil into thermomix jug

    2. Blitz for 3-4 seconds on speed 8

    3. add balsamic vinegar, scrape down sides

    4. add ginger,oregano,garlic powder, dijon mustard, maple syrup

    5. Mix for 10-15 seconds on speed 4

    6. Place Lamb Cutlets in a dish or tray pour marinade over cutlets, ensuring to get as much out of the thermomix

    7. rub both sides of lamb and cover, put aside to marinade for at least an hour, if you have time longer or even overnight is best

    8. Cook lamb in pan or grill with drizzles of olive oil

    9. Salt and pepper to taste

     

  2. SWEET POTATO MASH
  3. 1. Add sweet potato,milk and cream  into thermomix jug 

    2. Cook for 20 minutes VAROMA speed 1

    3. Add cinnamon and cook for further 5 mins VAROMA Gentle stir setting"Gentle stir setting"

     4. Insert butterfly and mix for 10 seconds speed 4

     5. Salt and pepper to taste(optional)

  4. ROASTED VEGES
  5. Cook your roast veges how you would normally cook them in your oven

    Cut pumpkin into pieces

    Mix vegestock into water and pour into tray

    Place pumpkin pieces in tray 

    Add broccoli in last 15 minutes of cooking

    Be sure to mix it through gently with the pumpkin and juices

    Season with salt and pepper

Tip

You can use any variation of veges for your roasted veges

Prepare your veges for the oven and roast them

Start your sweet potato mash then starting cooking your lamb cutlets. 

Once you finish your last cutlets the sweet potato should be ready as well to blend.

You can make gravy with the juices left over from the roasting tray but I tend to just love the lamb on its own, my kids love gravy though.

The longer you leave the lamb to marinate the tastier your lamb will be
