Ingredients

  • 2 cloves garlic
  • 1 brown onion, peeled, quartered
  • 1 carrot, quartered
  • 1 celery stalk, quartered
  • 1/2 Capsicum
  • 50 g Brocoli
  • 50 g cauliflower
  • 1-2 tsp taco mix
  • 1-2 tbsp Vege stock paste
  • 400 g tomatos
  • 300 g Chedder cheese, cubed
  • 1 package Mountain Bread Natural Wraps
  • 2 chicken breasts

Recipe's preparation

    Sauce
  1. Place Cheese into mixing bowl and grate 6sec/speed 8 or until your liking. Put aside.

     

    Place Garlic, onion, carrot, celery, capsicum, brocoli & Cauliflower (Just use whatever Veg you have in the fridge) into mixing bowl and blitz for 5sec/speed 8.

     

    Add the tomatos and blitz 5 sec/speed 8, or until veg are small enough for your liking.

     

    Add taco mix (see note) and vege stock. Put lid on and place the chicken breasts into the varoma and put on top. (I sprinkled the chicken breasts with some YIAH Prairie Poultry mix). Cook 25min/varoma/speed 1. or untill chicken breasts are cooked through.

     

    Remove the varoma with the chicken in it. Puree the sauce for 5sec/speed 9 turning it up gradually as mixture is hot. Transfer sauce into a thermoserver.

     

    Place Chicken breasts into mixing bowl and shred. 3-5sec/reverse/speed 4-5 or until your liking.

    Mix chicken in with the sauce.

     

    Line an oven tray with baking paper. Place 3-4 tablespoons of mixture about 2cm in from one edge (short side) of a wrap. Rolling the wrap over itself. Place seam side down onto the tray. Repeat this until all wraps are filled, or until mixture is all gone. (Mine made 6 wraps)

     

    Sprinkle the Grated cheese over the top and place in the oven for approx 15min, or until cheese is melted and turning a nice golden colour.

     

     

     

Tip

I serve ours with steamed rice, salad and some sour cream.

    Yummy recipe! I like to use a tin of diced tomatoes instead of fresh and reserve some of the vege sauce to spread over the top before topping with cheese. Very tasty

    A fabulous, easy midweek meal. I only used one chicken fillet and added a can of chickpeas when shredding the chicken. I substituted broccoli with 1 small zucchini. I used 2 tins of tomatoes in the sauce, put 1/3 in base of casserole dish, 1/3 with the chicken mix, and 1/3 on top of enchiladas. I served ours with a salad.

    These were great, so easy. I used tinned tomatoes as I didn't have fresh and still turned out yummy. Served with sour cream, yum!

    Thank you for this recipe, it was fantastic. Such a healthy, yummy take on enchiladas. Both hubby and I enjoyed, will definitely be making this again. Loved the link to the taco spice mix aswell!

    I've made this lots of times now and it's on our regular rotation of meals, it is in my top 3 favourite meals, I love love love it. I just chuck in whatever veggies are needing to be used in the fridge and it's delicious everytime. Thank you for this awesome recipe!

    Made this tonight and LOV all the veg that goes in - hidden - but i think it needed more flavour, will add more taco seasonining next time i think.

    Very Yummy! We also added 2 Birdseye chillies to the sauce and also spread avocado onto the wrap before adding the sauce. Delicious!
