Ingredients

mexican spice mix

  • 1 tbsp paprika, smoked
  • 1 pinch ground cinammon
  • 1 heaped teaspoon cayene pepper, or to taste
  • 1 level tablespoon cumin ground
  • 1 heaped teaspoon dried oregano
  • 1 salt and pepper to taste

Sauce

  • 1 onion brown half
  • 1 clove garlic
  • 20 grams olive oil, or oil of your choice
  • 2 Tin Tomatos, whole Italian romas is best
  • 500 grams chicken, breats, thigh or a mix, cut in to quarters, or even size pieces
  • 1 heaped tablespoon TMX stock concentrate
  • 1 shot espresso coffee
  • 1 each red and green capsicum, diced or thermomix chopped

Topping options

  • grated cheese
  • spring onions
  • jalepenos
  • fresh chilli
  • natural greek yougurt, I always substitute this for sour cream
  • Avocados
  • chopped fresh tomatoes
  • chopped lettuce

Recipe's preparation

    Spice mix
  1. place all ingredients into TM bowl and toast for 3 mins/ Varoma/ sp1

  2. Sauce
  3. Add onion and galric to spice mix, chop 3 sec/ sp7

    Scrape down sides, add oil, saute 3min/ 100c/ sp1

    Add tomatoes for 6sec/ sp 3.5

    Insert TM Basket, place chicken, lime wedges and diced capsicum  inside

    Cook 20min/Counter-clockwise operation"Counter-clockwise operation" /100c/ sp1

     

    depending on the amount of chicken and size,  you may need to check and rearrange in the basket at 15- 20 mins to esure it it cooked through, add a few mins as needed

     

  4. Shredding the chicken: once chicken and sauce is cooked, tip chicken ito sauce, the replace lid, Closed lid"Closed lid"  Counter-clockwise operation"Counter-clockwise operation" /sp4/ 4 sec

     

    Add optional tin of baked beans and use spatula to fold through

  5. use this sauce mix to fill enchilads, tacos, burritos or top nachos!

     

    I personally use all the toppings in the list for a crunchy healthy flavour packed meal!

Tip

You can easily double this recipe by adding an extra tin of tomatoes adn placing more chicken and capsicum in the varoma, be sure to use varoma temp in this case

 

 

OR

can be made vegetarian by adding chucky chopped vege instead of chicken, add legumes of choice such as kidney beans, add more favourites such as corn

    Nice recipe.... I heeded the comment below and only added one tin of tomatoes and some tomato paste instead. I also blitzed a few veg (celery, carrot & zucchini) to make it healthier for my veg-phobic children. My chicken also took a lot longer to cook then stated even though it was in smallish chunks.

    Once cooked, I drained the liquid and shredded the chicken with a few spoons of the sauce as I was using it for enchiladas and didn't want them too wet.

    I tried to thicken the sauce for the enchiladas with some cornflour but it was still quite runny.

    I actually made red rice to go with.... and in hindsight should've just used some of the sauce/liquid for the rice. Which I will do next time as the chicken was tasty and its a good use for the extra liquid!

    My kids loved the flavours! However, the chicken didn't cook at all after 20 mins in the basket so I put it into the tomato sauce in the bowl and it cooked in 10 mins. I added corn and kidney beans at the end and heated for a further five mins on reverse. I didn't add lime wedges as they weren't in the ingredients list. Couldn't see where to add the stock or coffee, though?

    A nice recipe.  Was a little wet so would add less liquid.

     

    We also cooked the chicken in the bowl as the basket didn't hold a lot.  The chicken cooked quickly in the bowl.

    lovely recipe! - I used one tin of tomatoes and 2-3 tablespoons of tomato paste (instead of two tins) and didn't seem to be too runny (and I used chicken mince so it cooked in the sauce)

    Yum!!  I used only one tin of tomatos and forgot the coffee, but was so delicious.  The sauce was a lot thicker than if I had used two. tmrc_emoticons.)

    Great flavours! We reduced the ceyanne pepper as I don't like things too spicy. It was very runny but we put the thermomix basket back into a thermomix bowl and drained a lot of the extra liquid out (bonus of having a second bowl - but you could use a Thermoserver or any bowl to do this if you wanted to) and discared the left over liquid although we were pondering what we could save it for and use it with so not to waste it. Will definitely be having again!

    Hayley, this is lovely! It was a bit runny for our soft tacos so we ate it out of bowls and used the tacos to mop up the juice. I think your lime wedges are missing off the ingredient list.  tmrc_emoticons.;)  Will definitely make again but may use fresh tomatoes or drain my tinned ones. Thanks for a lovely recipe.  tmrc_emoticons.)
