Ingredients

Tagine

  • 1 tbsp olive oil
  • 800 g boneless chicken thighs, cut into cubes
  • 2 onions, brown
  • 2 cloves garlic
  • 2 tsp ground coriander seeds
  • 2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 tsp chilli powder, (to taste)
  • 1/2 heaped tsp salt
  • 30 g honey
  • 400 g diced canned tomatoes
  • 400 g Chickpeas, drained and rinsed
  • 2 x 5 centimetres pieces of lemon rind
  • 30 g lemon juice
  • 400 g chicken stock
  • 250 g sweet potato
  • 75 g dried apricots, halved

Cous Cous

  • 1.5 cups cous cous
  • 2 tsp lemon zest (grated), (optional)
  • 3 tbsp chopped flat leaf parsley, (optional)
  • 1 Chicken Stock Cube, (optional)

Recipe's preparation

  1. Peel and quarter the onion and peel the garlic. Add to mixing bowl and chop for 3 seconds on speed 5. Add olive oil and sauté 100° / 4 mins / speed 2.

    Add all the spices and sauté 100° / 30 secs /speed 1.

    Add all ingredients except the apricots and cook 100° / 1 hr / Counter-clockwise operation"Counter-clockwise operation" / speed 1.

     

    Add apricots and cook 100° / 15 mins / Counter-clockwise operation"Counter-clockwise operation" / speed 1.

     

    Pour into thermoserver until ready to serve.

     

    Place couscous in a heatproof bowl. Pour over 1 ½ cups of boiling water, add the chicken stock cube, if using, and stir. Cover with glad wrap and stand for 5 - 10 minutes, until all the liquid is absorbed. Fluff with a fork to remove any lumps and stir though remaining ingredients.

Tip

The chickpeas will be mashed into the stew using this method.  If you prefer the chickpeas to remain intact, add them at the same time as the dried apricots

    Disappointed! My chicken thigh was shredded, so this meal ended up being used for baby food for my toddler. I think the cooking time is way too long for the recipe which was probably the reason for it shredding. I liked the flavour albeit very sweet.

    I cooked the recipe in my TM31 and used approx 600g of chicken thigh but could only fit in 250ml of chicken stock to the bowl. If you're using a TM31 use smaller quantities.

    The couscous can be steamed in the veroma and absorbes some of the spices!

    thanks, I liked this, it wasn't too zingy but I like things very mild and my bub will eat it. I also skipped a few steps (by accident!) didn't saute the spices and also omitted the apricots, so that may make a difference. But all my chicken came out shredded even though I had it on reverse, anyone know why?? I am a newbie so surely there has to be a trick! I used chicken breast instead of thigh...
