Ingredients

Steak Diane

  • 4 Scotch fillet steaks
  • 4 shallots, roughly chopped
  • 30 grams brandy
  • 500 grams Fresh Tomato Sauce, Bottled or from EDC
  • dash Worcestershire sauce
  • Water or Vegetable Stock, if required.
  • 20 grams Butter
  • pepper, to tase

Recipe's preparation

    Steak
  1. Flatten scotch fillet steaks and season with black pepper

  2. Place in tray of Varoma.

  3. Diane Sauce
  4. Place shallots in bowl Closed lid"Closed lid" and chop for 2 seconds on speed 7.

  5. Add 10grams of butter and brandy, saute shallots for 1 minute at 100 degrees on speed 1.

  6. Add tomato sauce and dash of Worcestershire sauce to taste to bowl Closed lid"Closed lid" . You may also like to add some stock and or water so that sauce does not become too thick. Cook for 20 - 25 minutes at Varoma termperature on speed soft Gentle stir setting"Gentle stir setting" .

    Place varoma with meat in position (add some vegies in bottom dish of varoma).

  7. At the end of cooking, remove meat and vegies and check sauce is to liking and add the other 10 grams of butter. If too thick add a bit more hot stock and then the butter.

    Stir in freshly chopped parsley and pour over the steaks.

    This sauce was delicious. It did need more butter, and I had to add some cornflour to thicken it, but perhaps this was just to adjust it to my husband's tastes - he LOVES diane sauce! As a diane sauce coinnoiseur, he commented that this was one of the best he's tasted. I would not steam the steaks again, but it was interesting to try a new method. They just turned out a bit ... meh ... when steamed. Thanks for posting this! I will make the sauce again!

    You're most welcome. I posted this after trying to find a TM diane sauce recipe myself with no success. I had hoped others might enjoy a good Diane sauce with their steak. I'm glad you have found it handy.
