  • 3 capsicums, Roughly chopped
  • 3 Zuchinnis Medium size, Roughly chopped
  • 1000 grams water
  • salt & pepper

Recipe's preparation

    Twice cooked pork belly
  1. Preheat oven to 220 degrees celcius.

    Place water into TM Bowl.

    Place pork in the varoma dish sprinkle with salt and pepper and steam 60 minutes / Varoma /Speed 3.

     

    Roughly slice capsicums and zuchinni and place on baking tray with olive Oil. Place pork on top of vegetables and roast for 40 minutes or until crackling is done.

     

     

Tip

You could also serve with coleslaw.

    This is seriously delicious !! I overcame my fear of cooking pork with this recipe, Id never had luck before, but this came out perfectly!

    Crackling is easy. Follow these steps.

    1. get butcher to score the pork belly

    2. put a wire rack over kitchen sink, place pork belly on top

    3. Pour boiling hot water over the scored meat, it will open up the scores

    4. Pat dry, leave uncovered in fridge till the next day, it dries the skin out.

    5. Rub skin with oil, salt and pepper.

    6. Put oven on full whack as Jamie Oliver would say. 

    7. Put pork in and check the crackling looks like crackling after 20 mins. I find it takes about 35m in my oven. 

     

    8. Turn oven down and cook pork as needed. you should get perfect crackling. If it's not, cut the fat off and stick it under the grill till it's perfect. If you do the steps,above you won't have to grill it.

    Made this the other night and was excellent everybody loved it.  Cooked it longer in the Thermomix and then just added more salt over the top and placed it unDer the grill it made awesome crackle  - yummy

    1st time ever cooking pork belly and this worked beautifully, 5 thumbs up! Rare for our family tmrc_emoticons.;)


    Added extra veg in roasting pan for great all in one dinner.

    This was great! Incredibly easy & tasty too. Only issue was I looked at the side for the time it took and it wasn't until I read the recipe body that it took an extra hour on top.
