Ingredients

500g pork mince

  • 1/2 teaspoon salt
  • 1 tablespoon cornflour/cornstarch
  • 1 tablespoon nut oil (any type is fine)
  • ground white pepper, to taste
  • 3 slices ginger
  • 4 cloves garlic
  • 6 mushrooms-shitake preferable
  • 2 tablespoons sweet bean paste, asian grocer
  • 3 tablespoons bean paste, asian grocer
  • 1 tablespoon fermented black beans, asian grocer
  • 1 teaspoon chilli bean paste (Szechuan), to taste
  • 1 tablespoon dark soy sauce, asian grocer
  • 250 grams water
  • 500 grams noodles (fresh or dried)
  • 2 carrots (julienned)
  • 2 cucumbers (julienned)
  • 2 --- spring onions (scallions) sliced
  • 1 tablespoon schezwan pepper

Recipe's preparation

  1. Marinade mince with salt, cornflour, oil and pepper.

    Set aside

  2. Chop mushrooms 3 sec / speed 7.

    Set aside

     

  3. Chop garlic and ginger 5 sec / speed 7.

    Scrape down the sides

    Add marinated pork mince

    Cook 5 mins / 100C / Counter-clockwise operation"Counter-clockwise operation" / speed 1

  4. Add mushrooms, sweet bean sauce, bean paste, blk beans, dark soy, chilli bean paste and water to the meat mixture.

    Cook another 15 mins / 100C / Counter-clockwise operation"Counter-clockwise operation" / speed 1.

  5. Meanwhile, cook noodles as specified on the packet.

    Julienne the carrots and cucumber.

    Chop scallions.

    Roast schezwan pepper until smoking and black and grind in a grinder or morter and pestle. (You can do this first in the thermomix if you prefer) 

  6. Serve in individual bowls, noodles with meat sauce (adjust salt to taste) garnished with scallions, julienne carots and cucumber to the side separately, sprinkled with schezwan pepper.
