Ingredients

Bacon, Spinach & Red Pesto Risotto

  • 100 g Parmesan Cheese Whole, cut into small squares
  • 1 brown onion, cut in half
  • 3 garlic cloves
  • 60 g Butter, cut into cubes
  • 400 g Risotto Rice (Arborio)
  • 8 slices bacon, chopped into cubes
  • 100 g dry white wine
  • 1-2 tablespoons chicken stock paste, Themomix made
  • 100 g Red Pesto
  • 50 g tomato paste
  • 800 g water
  • 2 Huge Handfuls of Baby Spinach

Recipe's preparation



    1. Grate parmesan cheese 10 secs speed 10. Set aside.



    2. Place onion & garlic into TM bowl & chop 3 secs speed 5.



    3. Scrape down the sides of the bowl with spatula.



    4. Add butter and bacon & cook for 3 mins, VaromaCounter-clockwise operation speed 1.



    5. Insert butterfly whisk & add rice & wine & cook for 2 mins,Counter-clockwise operation 100 degrees speed 1.5, with out the MC.



    6. Add the stock, pesto, tomato paste & water, cook for 15 mins, 100 degrees Counter-clockwise operation speed 1.5 with the MC off. Place simmering basket on top of lid.


    7. Pour it into a thermoserver that has the spinach & parmesan in it and stir through and let sit for a few minutes and then serve.

    I had to vary this recipe a little to use up what I had - 8 rashers bacon, vege stock not chicken, green pesto not red, didn't have much spinach so add some rocket as well - but followed the recipe otherwise. Rested 10 minutes in Thermoserver and it was delicious!!! I will definitely make this again; very versatile. Thank you for sharing Smile

    I made this tonight & it was SO good.. I used half the red pesto paste & only 6 rashers of bacon. Still so delicious!
