Bec's Table Chicken Cacciatore with Pasta
- 180 g brown onion, peeled and cut into 4
- 2 cloves garlic, peeled
- 20 g fresh basil leaves, a handful
- 40 g olive oil
- 500 g skinless chicken thigh fillets, cut into bite sized pieces
- 400 g Annalisa tinned tomatoes, diced or whole
- 400 g water
- 1 tablespoon Bec's Umami powder or 1, Continental chicken stock pot
- 1 tsp sugar
- 1 tsp flaked salt, or 1/2 tsp fine salt
- 1/2 tsp Freshly ground black pepper
- 150 g pasta Penne or Farfalle
- 50 g Pitted black olives
- 160 g Roasted Red Peppers, I often have these in jars in the pantry
- 200 g button mushroms, sliced

- Place 180 g Brown onion, 2 garlic cloves, 20g fresh basil, and 40g olive oil into the mixing bowl and chop for 3 sec/speed 7
- Scrape down the sides of the bowl with a spatula and sauté for 5 min/120°C/speed 1.
- Add the tinned tomatoes, powdered stock or stock pot, 400 g Water, 1 tsp sugar, salt and pepper, and 500 g Chicken thigh fillets cut into bite-size pieces (cubes),
- Pop on the lid and place the simmering basket on top, then set to cook for 15 min/100°C/"Counter-clockwise operation" /speed 1
- Add the 150 g Pasta, Add the 160g Roasted Red Peppers, Add the 200 g Fresh mushrooms chopped or sliced, 50g Pitted Kalamata olives
- Use the spatula to stir the pasta through. Replace the lid and the simmering basket and cook for a further 15 min/100°C/"Counter-clockwise operation" speed 0.5
- Allow the mix to rest for at least 10 minutes before serving for the pasta to absorb the delicious sauce and cook through.
