Ingredients
Group 1: The Dry Mix
- 100 g plain flour
- 60 g wholemeal flour, or spelt
- 15 g baking powder
- 1 teaspoon herb blend, Italian, dried, I use mine from my blog
- 1 teaspoon sweet paprika
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 teaspoon salt, flaked
- 1/4 teaspoon black pepper, freshly ground
- 2 teaspoons poppy seed, or sesame seeds
Group 2: The Flavour
- 50 g rolled oats, not quick oats
- 50 g walnuts
- 30 g dried cranberries, or barberries, something tart
- 80 g dried figs, or a mix of apricots, figs, dates
Group 3: The Liquid Gold
- 300 g Milk
- 30 g honey, or moolasses or malt extract

- Preheat your oven to 170°C and grease two mini loaf pans (or similar moulds).
- Combine Group 1 ingredients in the Thermomix bowl. Mix for 5 seconds/speed 4.
- Add Group 2, mixing for 4 seconds/reverse speed +3.
- Scrape down the sides, then add Group 3, and blend for another 4 seconds/reverse speed 4.
- Expect a runny mixture – don't panic! Pour into moulds and bake for about 25 minutes (varies with mould size). Let the baked crackers cool before freezing them for easy slicing (about an hour)
- The Final Crunch: Slice them thinly, spread them on cooling racks, and dry them in the oven at 100°C. Keep an eye to avoid burning. Note: The fruit bits won’t crisp up.

Tip
Slice them as thin and as even as you can.
You can keep the mini loaves in the freezer wrapped for up to 3 months. Just take them out when you need them, slice them and toast them up in the oven.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
