  • 120 g self-raising flour
  • 100 g Milk
  • 1 egg
  • 1 cans sweet corn kernels, Drained, or 200g frozen
  • 2 g salt
  • 1 g ground black pepper

    Method
  1. Add flour, milk, eggs, salt and pepper and mix 10 sec/ Sp5
    Scrape bowl
    Mix for further 5 sec/ Sp5 if needed
    Scrape bowl
    Add drained corn kernels and mix for 10 sec/Sp 4 Counter-clockwise operation"Counter-clockwise operation"
  2. Heat frying pan, add enough oil to cover bottom of pan to around 0.5cm.
    When hot, add teaspoon fulls of fritter mixture to pan. Do not overcrowd frypan.
    Fry each side until golden (approx 2-3mins each side, similar to cooking pikelets or pancakes)
    Drain on paper towels and keep warm

Tip

Recipe can be doubled or tripled (depending on the size of your bowl)

Larger fritters can be made (using larger spoon size), but these smaller morsels are perfect and crisp up well. A great size for toddlers and kids.

You can use frozen corn kernels in place of the canned. To defrost quickly, weigh kernels to a small bowl, add boiling water to cover then sit for 5mins. Drain and use in recipe.

This is an old family favourite, passed down and well loved. Enjoy!

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
